Use a system filter with an entry like this:

# Exim Filter
unseen deliver     spam-sorter@???    errors_to     
postmaster@???



Also pay attention to these configuration options:

system_filter = xxxxxx
system_filter_reply_transport = xxxxxx
system_filter_user = xxxxx
