Option 1) If each server handles different domain names then redirect by
recipient by matching the "local_part" of the address in a redirect router

If you dont have two different domains, create a dummy one such as
"test.com" in your exchange servers recipient policy, or individually by
user (IMPORTANT: make sure the correct address format is still the
default one in your recipient policy otherwise you will might start
sending out messages as username@??? or whatever)

Option 2) Use exchanges "forward all unknown accounts to this server"
setting (Somebody help me with the correct option name here). This
should work but I personally wouldn't use exchange to make the decisions
if I had something as powerful as exim to hand.
