AH HA! I have edited Eudora.ini and added the following:

SMTPAuthAllowed =1 (probably inessential)
SMTPAuthRequired=1

and, thanks to the latter, when I send mail Eudora tells me that it
could not find a supported authentication method. I offer PLAIN and
LOGIN.
