You should remove (or rename) /usr/sbin/sendmail and make that instead
a symbolic link to the exim binary.
eg
ln -s /path/to/exim /usr/sbin/sendmail
I'm not sure whether the "real" sendmail binary lives in /usr/sbin or
/usr/lib, but it is the real one that you want to replace.
