Why do you want to rewrite the headers?

I'd not use /etc/aliases, it's mostly understood as redirection
information for local addresses.
forward_virtual_user:
driver = redirect
domains = dsearch;/etc/exim/virtual
data = ${lookup{$local_part}lsearch*{/etc/exim/virtual/$domain}}
And /etc/exim/virtual/<domain>
foo: doda@???
# optionally forward all addresses
*: mrx@???
