The relevant address is the envelope sender address: the argument to MAIL FROM.
Your email client (which is sending the email) should be configured to set this correctly, but Exim can rewrite the sender address. Chapter 31 of the documentation describes rewriting, but I think you want to say something like this:
*@*.cimpaca.unice.fr $local_part@??? Ff
F: rewrite the envelope sender address
f: says rewrite the From: header address - so that people don't reply to an invalid email address.
