If you use Debian, there is "dpkg-reconfigure exim4-config" which uses
automated configuration, asking you a few questions; and that can
configure Exim to what you want, other than storing the mails in a
mysql database. Databases are not the best choice for storing email,
anyway ...

If you can't or don't want to use automatic configuration, there is
(should be) /usr/share/doc/exim4/examples/example.conf.gz. You can
adjust it do your needs and copy it to /etc/exim4/exim4.conf.

The Exim documentation is of outstanding quality and availbe in a
number of different formats, like html, info, pdf. It will help you
with configuring Exim the way you want it.

There are many ways to do that. Unless you can describe exactly what
you want to do, your question cannot be answered. BTW, this isn't the
right list for questions about Evolution or other MUAs. There seem to
be some mailing lists dedicated to Evolution, googleing for "evolution
mailing list" can find some.
