Another possibility would of course be a "subdirectory" option, that
causes delivery into a subfolder, if it doesn't expand to the empty
string...

directory = ${lookup mysql{SELECT maildir ...}}
subdirectoy = ${if def:h_X-Spam:{/.Junk}{}}

Still clumsy, though.
