So what would be the best way to download all mail via IMAP ready for uploading to the new servers?
As an aside, is it possible to send mail via Thunderbird through Exchnage?

On our Exchange system (can't comment as to whether others are the
same) the username for IMAP has to be domain/username/alias where
'alias' is the entry under the alias field in the Exchange management
system, which is likely to be the local part of your email address but I
think could be different if you have different internal nicknames to
external email addresses. The password is your normal logon password.
