[exim] filtering / processing of mail mime attachments using…

Dear List,

I would like to use exim (or exim and something else) to process mail mime
attachments before local delivery.

In particular I wish to pipe word documents through a word-to-text converter
and then attach the plain text word document to the file (before the word
document).

Do you know how I might acheive this?
