If courier does smtp-time address verification then probably the simplest
solution is to use verify=recipient/callout in Exim's RCPT ACL. Or you can
arrange to have a copy of your user list on the Exim box and use that for
verification.

See chapter 45 of the spec for Exim's logging options. You can't log the
message body, and the entire message header may be logged for DATA-time
rejections.
