Well, if you searched for all that in google, you'd get a lot for a
week's reading ;)
Anyway, in an ISP, as I have come to realize, whatever you want to run
is dictated by your "product design". This will determine what you run
for all those apps and how they easily fit into your product
specifications. Also, how much you understand these apps will be a
factor as you have to support them.
It's hard (for me) to share my experience here because I am not such
a good writer but what I run matches what you have mentioned. It will
be easier for you to make the following choices:

1. What database backend - MySQL, PgSQL, or LDAP. At the moment I
really need to learn Open (LDAP) for the sole purpose of distributing
user data (mail) across several servers. That's my only interest in
it for now and if I could do that _easily_ with Mysql, I wouldn't
bother touching that devil!

2. What apps to run for POP3/IMAP - Courier-imap will give you those
two instantly, coupled with the fact that it can authenticate against
Mysql, OpenLDAP, and even PgSQL. Your choice of database comes from
(1) above.

3. Webmail - This is basically determined by the features you want to
give to the users.

It's a long story this one, but perhaps you need to ask specific
questions. Some of those can be answered off-list. A mailing list is
supposed to be a resource for addressing problems mostly. These days,
'experiences' are stored in Wiki, and of course books which you can buy.

To start you up: http://silverwraith.com/vexim is an application that
you can start building it and grow up with. It almost uses the KISS
principle, until you start demanding more that is specific to your case
;)
