No.

The one_time option just remembers new recipients, which something that
relates to the whole message. Rewriting the reverse path is an
address-specific thing, which is a different kind of animal.

If you rewrite using a rewrite rule, which is applied when the message
arrives, the rewritten sender is remembered.

Alternatively, generate something in an ACL and save it in an ACL
variable.
