Most likely nothing. If your Exchange server is set to accept mail for your
domain(s) as it would if it was taking connections from the outside world,
it should Just Work(tm)

tail -f /var/log/exim/mainlog (or whwever you keey your logfiles)?

Also remember that if your Exim server is going to take over duty for all of
your site's incoming mail, you'll probably need to make DNS changes to
your domains to update your MX records.

Well... that depends on how you've configured things. Making use of the
various debugging functions in Exim like -bh and -bt will tell you how it
will handle your mail. You should also watch your log files and make sure
everything is working as you'd expect.
