[Exim] Entering a name in From: header

Subject: [Exim] Entering a name in From: header
I want my email to show that it came from "Pickett",
so I'm sending in the following:

MAIL From: Pickett <scottpick@???>

But, exim drops the "Pickett", keeps only the email
address and returns the message:

250 <scottpick@???> is syntactically correct

Is there some configuration setting or another way to
get it so that mail clients will display my last name
("Pickett") as the sender of the email?
