smtp_accept_max_per_connection is 1000 by default. If you are pumping
that many messages into the queue you should probably set queue_only
or smtp_accept_queue_per_connection, since delivery will take rather
longer than reception and that may be the cause of you exhausting your
open file table. (Or there might be a file descriptor leak in Exim in
this situation.)
