My time and date for the OS has been corrected since the time change but
Exim seems to not pick it up in the received headers. The logs are up
to date with the correct time, but just the received timestamp is off.
Any ideas would be greatly appreciated.

Not sure which OS you're running, but your system date command
(/bin/date or
/usr/bin/date) returns the correct time and correct zone information?
