Run an SMTP listener on a non-standard pot, in high debug mode and then
connect to that, e.g.

On the server:

    exim -d 9 -bd -oX 2525

On the client:

    telnet serverhostname 2525
    ....

Obviously, what's important is what you see on the server, not the
client.
