That sounds like what I do here for one user, a bit differently
from the way Philip suggested. Say the user's address is
offsiteuser@???. I leave the hosted domain ourdomain.de
*in* local_domains, then as the first director I have:

local_dom_but_offsite_user:
    driver = localuser
    local_parts = offsiteuser
    transport = force_remote_smtp


The transport is just a copy of the plain remote_smtp, but with
a "hosts = <isp's relay server>" added.

Just make sure fetchmail isn't pulling her mail back on-site, or
you get a loop I guess.
