Hi,
On the secondary box you'll want local_domains to be empty, with
relay_domains to refer to the list of local_domains on your main (primary
server). Much of the rest of the config with be as per the default config
that comes with exim.
In the DNS, as you perfer to below, you will want for each domain,
my.domain.com IN MX 10 primary.mail.server
my.domain.com IN MX 20 secondary.mail.server
