logging hdr re-writes

One of my exim boxes re-writes the whole lot and this is logged since
env-to is written to a mainlog.

Our development exim machines
don't re-write env-to (mainly to allow for local delivery etc), is there
some easy way to do logging the apart from post processing the logs?
