So I adjusted the rewrite rules to be as follows:
begin rewrite
root@* realemailaddress@??? Eh
*@hostname realemailaddress@??? Eh
*@*.realdomain.com realemailaddress@??? Eh
And the results are much better testing with the Exim command line tool.
