This looks like a client MUA problem, and not Exim. Exim in general does
not modify message bodies, and that error from the xxxxxx01b.mail.protection.outlook.com
site that Exim is trying to send to:

reads like it's complaining about the message body to me. So I think you need to
investigate your Roundcube. It is all messages from there, or some subset you
can characterize?
