I am not keen on adding anything to pcre2test that is not necessary for testing
PCRE2. Why do you need this in pcre2test? You can do similar things in
pcre2grep, which does output in UTF-8:

$ pcre2grep -ou 'á'
xáx
á

The first line after the command is the input, the second is the output.
