If i remember right, there is no such option in the config file, but if you
compile byself, the complete string as the version could be adapted within
src/globals.c or src/globals.h , but i would recommend to only change the
header / banner string, because the version number as such is used on many
other places too - you may find the line by a search for "(Exim " in globals.c
(or.h).
