According to the latest docs
(https://www.exim.org/exim-html-current/doc/html/spec_html/ch-support_for_dkim_domainkeys_identified_mail.html#SECDKIMSIGN)
there is no way to set the DKIM "identity" field (i=) on outgoing signatures.

Allowing this optional field would be useful, for example to segment outgoing
email into different identities, without needing a different key and DNS setup
for each segment.

The DKIM deployment draft contains some examples of using this, such as
