update documented proxy variable names

Hi

Using an old configuration file with exim 4.87 generates temp errors.

The variable names set by enabling proxy support changed in commit
e6d2a9894df8c3b65920e903ab21076a0a37e20e but the documentation still references
the old variable names.

Please find attached a patch to update that.
