So far you haven’t mentioned headers. If that’s true, then you also want to remove any headers which mention IPv6 addresses, but I think Google are just concerned with connections from IPv6 addresses.

Then this isn’t about headers. If you want to maintain a list of servers that require IPv4, then that’s fine. However, it would be much simpler just to use IPv4 all the time. Perhaps the content of your list could be just "*" (if that works as I think). After all, Google may move their MX hosts. And other providers might reasonably adopt a similar approach. For example we’ll give you a very high spam score if you don’t have a PTR record with FCrDNS. But we don’t accept any IPv6 email.
