The From/Reply-To: header shouldn't change. Except you do header
rewriting. Exim adds a Sender: header occasionally, if the From: doesn't
match its expectations.

And Exim sets the return path to what it thinks is right. If you use
SMTP authenticated connections from your customers, you may want to
check your options around the ACL items

    control = submission/sender_retain
    control = submission/domain=….


and the AUTH items

    server_set_id = …
