I'm not aware of one. Start with the real documentation:
http://exim.org/exim-html-current/doc/html/spec_html/index.html
(if you're not on the most-recent Exim release, dig out the
specific older version).
Being on Centos is not relevant per. se.
Decide how you are going to identify/describe these "virtual"
users, then how to access those descriptions as Exim lists.
Take the default config, and modify it to match your needs.
