"exim -bpru" will show remaining undelivered recipients on remaining mails,
unsorted, which will be the fastest way to see what's in the queue.

Looking at "exiqsumm", documented at
http://www.exim.org/exim-html-current/doc/html/spec_html/ch-exim_utilities.html#SECTsumtheque
and see also the other tools in that chapter.

The contents of the files in the queue are fully documented at
http://www.exim.org/exim-html-current/doc/html/spec_html/ch-format_of_spool_files.html

At present, we've been given no information which can be used to isolate any
problem.

So far, it sounds very much like you've sent a lot of mail to unfiltered
addresses, by using lists of recipients of unclean provenance, and thus
naturally ended up with a lot of bounces, which is only to be expected.
