I think that the failure to log this by default, on a mail-client-facing SMTP
interface, is an issue.

I suspect that the correct solution is to include a default `log_selector`
setting in the configure.default which turns on *much* more logging and
encourage that to be used by edge-sites, such as SMTP Submission acceptors.
Edge-sites should have a low enough volume that we can turn on almost all
logging in the example config, while leaving the binary's default level at its
current state, which logs enough to show normal transactions for tracing and
diagnosis without overwhelming the logs on high-volume settings.

It's often politically hard for sysadmins to lower the default amounts of
logging, so we should be hesitant to increase the default, but can strongly
suggest a more comprehensive approach.

Anyone disagree with this approach?
