How does it break regular mail?

Also, for clarity: the DKIM folks argue that a DKIM signature is for some
domain that wishes to assert identity and that it's not part of DKIM itself to
argue which domain should be doing that or which headers/envelope it should
match. What people typically use is ADSP or DMARC and it's those two which
specify that DKIM domain identities should match the From: header.

So if you're choosing to sign a message and are setting dkim_domain to
something other than the header derived from From:, then you're not signing in
a way that's compatible with ADSP/DMARC and your signature may not be
interpreted as you hope.

The only exception to this I know if is for mail forwarding with resigning, ie
running a mailing-list, in which case you want to use the email address from
the Sender: header inserted by the MLM instead of an email address chosen from
those present in the From: header.
