Shouldn't you lookup the password here, as you used in your command line
checks:

> exim -be
> '${extract{auth_pass}{${lookup{mx@???}wildlsearch{/etc/exim4/smtp_users}{$value}fail}}

log_selector += all

… but I'm not sure how much about the auth process it logs.
