OpenVZ, which is a paravirtualization technique. (I am going to migrate
that to KVM, that's why I upgraded the host from Debian Lenny to Squeeze.)

NAT.
You are right, when using OpenVZ, changing the host environment then
also changes the guest environment.
Do you know the mechanism that decides which IP address to use, if the
interface option is not given to the smtp transport? Of course, Linux
decides that question, but do you know how this is done?
