[exim] When does DKIM ACL run vs DATA ACL?

Can I set variables in the DKIM ACL that I can then use in the data ACL?

I'm running greylisting as per:

but I'd like to skip greylisting on the assumption that gmail, paypal,
other big DKIM senders with valid signatures, will all resend. Plus that
way I wouldn't end up individually greylisting each of their MXs.
