While in theory there eventually might be someone running an archaic 7bit MTA,
in practice this is a non-issue today. The only notable examples of such MTAs
are MMDF and MS Exchage 5.5, which both have reached End-of-Support and
End-of-Life status several years ago.

We're running Exim with accept_8bitmime on a large university mailservers for
two years already and noone reported any problem. Without it, other mailservers
believed we're 7bit site, converted all emails to 7bit and all signatures were
broken.

In other words, running without accept_8bitmime causes very serious problems,
while enabling it does not harm anymore these days.
