Now that I actually looked and read up on address rewriting a little
(gosh darn I'd never used it before! errors_to & SRS & PVRS ftw) I can
see your issue.

Remove the < and > in there.

begin rewrite
\N^(.*@example.tld)$\N TAG$1 SF

# exim -brw from@???
    SMTP: TAGfrom@???
  sender: from@???
    from: from@???
      to: from@???
      cc: from@???
     bcc: from@???
reply-to: from@???
env-from: TAGfrom@???
  env-to: from@???
