Real addresses have been replaced. Of course TAGto@??? is not a valid address but the RCPT TO address shouldn't be rewritten, only the MAIL FROM one. We should read :

Dec 16 08:54:03 gw-mail exim[10158]: 1LCUkj-0002dq-AF <= TAGfrom@??? H=localhost (toto) [127.0.0.1] P=esmtp S=256
Dec 16 08:54:03 gw-mail exim[10159]: 1LCUkj-0002dq-AF => to@??? R=dnslookup T=remote_smtp: xxxxxxxxxxxx
