Yes it will accept them, but you should shut down Exim (and ensure the
cronjob isn't running) while you do this, so that Exim doesn't see one
of the two or three files associated with an email.
If the old and new machines were running Exim at the same time, then
there's a theoretical risk of name collision. localhost_number is
useful for dealing with this problem.
You probably want msglog too.
You probably don't want db/ or scan/.

Pretty much what you are proposing to do, but we had localhost_number
set by every Exim in the cluster so that there was no risk of name
collisions.
