but installation was made with Hylafax installation (I think)
and I need to use exim with Hylafax

Probably the problem is that the receiving MTA does not accept the
message because of the envelope. "ubuntu" is not a FQDN.

In addiction, i guess you have a exim default installation.
Since ubuntu is an debian derivation, please try
"dpkg-reconfigure exim4-config" and select an appropriate setup for
you.

yip, and as Sander mentioned the Exim logfiles. Take a look at Tom's old
exilog (http://duncanthrax.net/exilog/) which has agents who tail the exim
logfiles and insert the data into a db. Have a squizz at that for some
ideas.
