Oh yes, I copy+pasted that wrong. Now I have:

smtp_accept_max = 128
smtp_accept_reserve = 32
smtp_reserve_hosts = ${if eq{$interface_address}{SERVER_AUTH_INTERFACE}{*}{}}
smtp_accept_max_per_host = 4

That seems to work the way I want.
