Exim is not a mail store. It's used for moving mail, not for storing it.

If you've not chosen mailstore software yet, Cyrus IMAP is a good option.

If you do use an IMAP based mailstore, and if your Exchange server offers
IMAP, and if you don't have too much email to migrate, then try using
Mulberry (an email client that does IMAP very well) to move the email from
one to the other.
