[exim] Setting "Default Email Address"

Hi Guys,
I have looked all over and can't seem to find the answer to this. I am trying to set in Exim that when root account (or any other for that matter) sends out an email that it should display user@??? or better yes me@??? as opposed to the way it is now which is user@???.
