It is possible. When/where do you want to change it? Here's how you can do
it
in the system filter, I think:

  if $h_Subject: matches "(.*) yyy\\$" then
     headers remove Subject
     headers add "Subject: $1"
  endif

(With reservation regarding the number of backslashes.)
