Wow, tested it and it appears to work.

I'm sure I could have got this ... I sat around for hours testing mail to
users, mail to users with SPAM quarantines setup with sieve .forwards, and
in all that time, I forgot to check what would happen if I sent a mail to a
non-existent user!

Thank you all for the quick help ... so simple.
