something like that could work:

remote_smtp:
driver = smtp
interface = ${lookup {$sender_address_domain} lsearch
{/etc/exim/domain2ip}}

with the file containing such entries:

example.com 1.2.3.4
example.net 5.6.7.8


If the domain is not listed, the choice is left to the OS (like the default).
