As already pointed out: It's time to get rid of the catchall.
It's bad karma ;)

I'd suppose a completely different setup:
Use vexim and switch exim over to virtualised domains.
Even though you are most unlikely in need of managing multiple
domains with your server, vexim gives you the ability to add and
remove aliasses with 2 clicks in a webinterface. For example I have
around 60 aliases defined, all pointing to my private email, adding
a new alias for every sick company out there that forces me to register
with an email. companyname.spam@??? is my favourite, that makes
it very easy to see why I added that alias and what not...
