I wouldn't use ".local" as official domain name.
I'm not sure if .local is officially reserved for Apple's Bonjour
stuff (aka RendezVous aka ZeroConf).

Well - this looks like the domain name in the recipient address is
missing _and_ there is somethinng wrong with the
envelope-from-address.

No, this only concerns what your exim logs when invoked in debug mode.

You do - if you want your exim to do SMTP authentication against
another server which may be what you want.
I would also recommend using a smarthost.
