"It depends".
Are you doing virus scanning? Are you doing spam-scanning? If so,
which spam-scanning software? What sort of disk system do you have, and
how much RAM? All of these, you need to ask _yourself_ so you figure
out what to test. There are too many factors for reliable figures from
us.
The best you can do is raise it and test. Make sure that you test with
spam, virus (including inside ZIP archives) and large clean mails which
need to pass through both the other scanners first.
Scanners like SpamAssassin are *wet-finger-in-air* going to limit how
high you can set smtp_accept_max rather more than something like dspam
will.
